stuffed acorn squash for dinner

this is the recipe I used for guidance. I left out the apple but used some syrup to add some sweetness. 

these are the ingredients I used: 

  • 2 acorn squash, halved and seeded
  • butter & olive oil 
  • maple syrup
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 1 clove of garlic, crushed
  • 1 tsp ground sage
  • 1 lb ground turkey
  • 1 cup mushrooms, sliced
  • freshly chopped spinach
  • salt and pepper to taste
  • 1/2 cup grated mozzarella cheese

dont worry - I made it my own. added onions to the potatos and gorgonzola to the steak.

turned out sooo yummy!

so I made the best chicken ever!

here goes:

  • melt 1/2 stick butter in oven-safe pan
  • add chopped 1/2 yellow & 3 green onions, 3 smashed garlic cloves
  • cook untill translucent
  • add chicken thighs and drumsticks (salted & peppered)
  • brown chicken on one side, flip
  • add 1/2 cup white wine, 1 cup veg (or chicken) broth
  • sprinkle bread crumbs on chicken
  • add thyme and apples
  • cover, bake at 400 F for 30 minutes
  • uncover, bake for 10 more minutes (while you heat the garlic bread)
  • serve with mashed potatos, salad and bread

my first attempt at making gnocchi. for my husband’s birthday dinner I sought out to make his favorite… and I must say it was a success!!

a lovely herbed porkchop w/raspberry sauce & mashed potatos

lunch: leftover pasta w/ zucchini & carrot ribbons
dessert: yogurt w/ berries
dinner:

Diet :: day 24 :: friday

breakfast: fried egg; smoothie
lunch: leftover zucchini & onions; tomato & tuna …espresso …green apple
dinner: brown rice pasta w/zucchini & carrot ribbons served w/parmesan chips; tomato & onion salad… a glass of chardonnay

this was one of the most beautiful dishes i’ve made in a while!
